This is a very short how-to.
The first way you can unlock all the maps is the hard way. Beat the game on at least regular mode.
If you want to unlock only the Arcade mode of Zombies, when you first start up the game, you press start at the main screen. Then your in a room looking at a TV set. For those who do not know, you will see this room a lot in campaign mode as it's where you are located as your being tortured to recall all your previous missions in your life. Anyways, while sitting in this chair, spam tap the L & R 2 buttons. This will cause you to stand up. Now walk forward and turn left. Follow the wall until you come up on a small computer.
Once at the computer activate it. You will be shown a key-board in the top right of your screen. Type in 'DOA' then, press enter. Congrats you have unlocked the arcade mode of zombies.
If you would like to activate all the maps, instead of typing DOA type in '3ARC UNLOCK' and press enter. Give yourself a pat on the back, go grab a drink sit back and enjoy your new unlocked maps for Zombies and have yourself a good old time.

EDIT: Effective Tuesday December 21st, Activision released a new game within CoD Black Ops Called Zork. This is a very old game, Activision had purchased the rights to it back in 1986. Anyways, in order to unlock this game. Go to the computer in the main start up room just like described above and type in the code 'Zork' this will unlock the game and also give you the acheivement 'Eaten by a Grue'. ENJOY THE NEW GAME!!! =D

  On black ops for PC you can tap space bar a lot and it gets you out of the chair.

  On Xbox 360 you spam the left and right triggers to break free from the chair.

  You can also type other commands at the computer to view images and hear sound bytes from the game, kinda neat really.

  DOA and 3ARC UNLOCK only unlocks Dead Ops and FIVE the rest of the maps from Ascension to Moon, and Nacht to Der Riese you have to buy the map packs that contain them
